The Easiest 20 minute Meal!

Actually, I have a whole bunch of super fast meals since I can't really abide eating takeout and I need to make everything from scratch. But this is one of my favourite easy meals to make and I love it because there is barely any cooking involved yet it is still so flavourful! Also because I just made it up out of boredom and trying to make a meal with what I had in the fridge. So I am going to share my recipe...

- Take a whole bunch of vegetables that you want, make sure it's colourful as food is always more fun to eat when it's pretty. I usually use the following:
- red peppers
- carrots
- savoy cabbage
- bok choy
- baby corn
- Cut them all up into equal size pieces and parboil them. Make sure when you take them out you immediately put them in cold water so they don't keep cooking.
- Put another pot of water on to boil (for your soba noodles).
- Make a quick dressing of tamari, sesame oil, mirin, grated ginger, fresh chopped chillies, lemon juice, salt and pepper. Put that aside.
- For protein, you can use whatever you want. I usually have to make two sides — one vegetarian option and one meat option for veggie friends and Stef the non-veg eater.
For meat: saute bite size chicken in vegetable oil and teriyaki sauce.
For vegetarian option: sauté hard tofu and mushrooms in teriyaki sauce.
- When soba noodles are al denté, rinse off in cold water. Then in a big mixing bowl, toss about two teaspoons of sesame oil and soy sauce. Toss the soba noodles in the mix and let it absorb the flavours and then toss in some sesame seeds to add a nice little bite.
- Add veggies to the mix and throw in your dressing and voila! Easy quick meal!
OK, I am a nerd. If you have time, you can cut your carrots into flowers. It only takes a couple of minutes and makes it so much more fun to eat!

Uh, dude... that's not so easy. Alphagetti and toast -- and you save 18 of those minutes!
